Portugal is like a secret club, only admitting those who have traveled across Europe, still enjoy the continent, but want to get away from the hordes of new travelers flocking to its more famous sights. From its natural beauty to its cuisine, and rich history to its people spilling over with genuine kindness, it is firmly established in our minds as a destination we will return to, and recommend, for years to come.
What criteria are paramount for a once-in-a-lifetime vacation? Beautiful beaches, beautiful snorkeling, world-class food, and some adventurous excursions too? We were searching for all of this, and thought, how about Fiji?
This would be our first trip with a newborn, 8 months old, to be precise, and we were taking every precaution. If it were to go well, it might offer a glimmer of hope that we can still be adventurous, even with a fragile new life to love and care for. So we booked a direct flight to Europe, to an English speaking country, for a week in the most tranquil, relaxing places we could find: the Cotswolds.
This mythical land offers idyllic, laid-back villages, a rich history, and some of the best sunsets in the world. After exploring some of our own ancient history, it’s a short journey out on the water to experience some of the most beautiful islands scattered across the Aegean Sea. Our goal: finding our favorite Greek isle.

When we dream of 'getting away from it all', our mind typically envisions a white-powder-sand beach, warm turquoise water, and a piña colada. A lone palm tree provides shade on our own little deserted island as we gaze out to our sail boat, reminding us that, where we are, no one else is, and that's just the way it should be.
Spain leaves you with images of the good life, and savoring the little moments. Images of world class art and innovation. Feelings of immense power and influence. We journeyed from the storied center of Madrid to the historic yet youthful Salamanca, then south to energetic Seville and Granada before ending our trip in the cultural wonder that is Barcelona.
I don't remember taking a breath the entire ride to the Hopital Adventiste d'Haiti in Carrefour. If it wasn't for the jolts of car-sized potholes, and frequent car horns pushing pedestrians aside, I don't think my body would have initiated the involuntary activity we often take for granted.
